Zydeco Chop Chop Potato Salad

  • 1 pounds cubed red potatoes, skins on 
  • 1 1/2 tablespoons of liquid crab boil 
  • 3 hard boiled eggs 
  • 1/2 cup rehydrated Zydeco Chop Chop
  • 2 tablespoons Creole mustard
  • 1 tablespoon Slap Your Mama seasoning
  • 1/2 cup tablespoons mayonnaise
  • 1/4 cup chopped Tabasco Spicy Pickles
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper

    Add potatoes and crab boil into a large pot of boiling water. Boil until potatoes are fork tender. Chop hard-boiled eggs into bite-sized pieces. Combine eggs and potatoes. 

In a small bowl, whisk together remaining ingredients. Pour over potatoes, tossing gently to coat. Cover and refrigerate.
