Zydeco Chop Chop Carbonara
1 package spaghetti
1/2 pound bacon ( but if you want to use more, who are we to stop you!)
3/4 cup Parmesan cheese
1/2 cup rehydrated Zydeco Chop Chop (we rehydrated with Chicken Stock)
1/2 cup chicken stock ( plus 1/4 cup if you choose to rehydrate with stock)
parsley/basil for garnish optional
black pepper to taste
Cook spaghetti according to package directions or until al dente.
Rehydrate Zydeco Chop Chop.
Cut bacon into 1 inch pieces and cook in a frying pan. When bacon is crispy remove from pan, and discard all but 1 Tbsp. of the grease.
Add the rehydrated Zydeco Chop Chop to the pan and allow to become fragrant, about 30 seconds.
When Zydeco Chop Chop is done, add 1/2 cup chicken stock and put the bacon back in. Stir and set aside.
In a separate bowl, mix the eggs and Parmesan cheese.
Drain the spaghetti and transfer to a large bowl. Immediately pour the egg and cheese mixture on top and stir.
Pour the bacon/onion mixture over the top of the spaghetti and stir again.
Garnish with parsley, basil and/or black pepper.
