Zydeco Chop Chop Corn Dip

Ingredients

  • 2 cans of whole kernel corn, drained 

  • ¼ cup of ZCC hydrated with ½ cup water

  • 1 block cream cheese

  • 1 cup shredded cheddar cheese

  • 4 oz sour cream

  • Juice from ½ lime

  • 2-4 tbsp chopped cilantro 

  • 1 jalapeno, chopped 

  • ½ tsp cayenne pepper

  • Salt to taste

Directions 

  • In a medium saucepan add in rehydrated ZCC and sauté for 2-3 minutes

  • Add in corn, jalapeño, cream cheese, cayenne pepper, and salt and heat over medium heat. Stirring occasionally until cream cheese is melted and ingredients are well incorporated.

  • Stir in cilantro, lime juice, and sour cream then transfer to a baking dish. 

  • Bake 350°F for 20 minutes

  • Serve with corn chips
